Web-only recipe: Fresh Pineapple Salsa

  • ½ pineapple, peeled, cored and finely diced
  • 2 red chillies, seeded and very finely chopped
  • 20 mint leaves, finely shredded
  • 2 tablespoons lime juice
  • salt and pepper

Mix all ingredients together and serve with ribs. Salsa will keep in the fridge for a couple of days.
