Web Exclusive - A Taste of: LEEKS

Delicious, easy and often overlooked, leeks are one of the hallmarks of Winter.

1) Add cooked, sliced leeks to a creamy salmon pasta.

2) Substitute leeks and celery for spinach in the classic Spanakopita recipe.

3) Use Tarragon to add a twist to a leek and potato soup.

4) Leek and Camembert work beautifully in an egg- and cream-based tart. Sprinkle with Parmesan.

5) Jazz up ordinary mashed potatoes with leek and fennel.

6) Make a pizza topping from gently fried leeks, artichokes and diced Pancetta.
     
7) Asparagus and leeks make a great soup. Add lemon rind to taste.

8) Make a sauce for sautéed baby leeks out of wine, lemon slices, tomatoes and parsley. Serve at room temperature.

9) Bake leeks slowly in the oven with stock, butter and seasonings.

10) Make a crust of Parmesan and breadcrumbs for softened leeks.
