Kuzu is extracted from the roots of one of Japan’s most vigorous mountain plants. Being a starch, it has a smooth texture and neutral flavour which makes it an ideal thickener for soups and stews, sweet and savoury sauces, glazes and pie fillings.
Flavonoids, which occur naturally in kuzu and other plants, are known antioxidants. They also have the ability to inhibit the contraction of smooth muscle tissue, thereby increasing blood flow and relieving cramping in the intestines. These flavonoids can also reduce high blood pressure, relieve chronic migraine headaches and ease aches in shoulders, neck and head.
Kuzu is known to provide relief for hay fever, bronchial skin rashes and asthma.
It is sold in health food stores and quality Asian/Japanese stores. Once opened, it needs to be sealed in an airtight container.
