Knights of the Sky

Peter Jackson has used his cinematic expertise to recreate scenes from World War 1, housed in the purpose-built Omaka Aviation Heritage Centre that opened last December. But this is no static display. Breathtakingly realistic figures act out scenarios with one of the world’s largest collections of original and replica aircraft. Staff from the workshops of Weta and Wingnut employed their film-making know-how to create special effects that earned the accolade “Best museum in the world” from the Sydney Morning Herald’s travel writer.

Polly's Smoked Kahawai Pie

POLLY’S SMOKED KAHAWAI PIE
(see story Adventures of the fabulous five in Issue 41 of NZ Life & Leisure)

Kahawai straight from the smoker – even up against the fat, freshly boiled crayfish of Marokopa it’s a taste hard to beat. It’s not often there is any left over, says Polly, but on those occasions she sometimes makes it into a pie.

350g pumpkin
2 medium kumara
4 medium potatoes
6 tablespoons butter
1 onion, diced
garlic
6 tablespoons plain flour
3 cups milk
1 teaspoon wholegrain mustard
3 cups smoked kahawai
chopped parsley
grated cheese

Cook vegetables; mash with a little butter and milk. Melt butter, add onion and garlic and cook slightly, stir in flour then add milk slowly.

Mix in mustard and season to taste with salt and pepper. Stir in smoked kahawai and parsley. Spoon mixture into an ovenproof dish, top with

mash and sprinkle with grated cheese. Bake at 180C for about 30 minutes.

THE SLAM OF THE OFFICE DOOR as work finishes and Christmas holidays gegin is one of the finest sounds in human history, if you ask me. The year's work is finished and nothing more can be done. It is time to unwind 12 months of accumulated knots, spread them out on the great beach towel of an Aotearoan summer and
see them drift away in the sea breeze.

Chilling out is very good for us and no one is more persuasive in this regard than NZ Life & Lesiure's new well-being columnist Dr Libby Weaver. We need to slow down, she says and switch off. Today's tenacious technology enslaves us to a 24-hour locked-and-loaded state of connection and preparedness. Reject it. Be unready and unavailable - and feel no guilt. I am giving it my all this summer - flat-out doing nothing.

It's been a busy year as we've reshaped our lives and our businesses to the new 'norm'. Cantabrians taught us so much about the power of acceptance and its usefulness when facing terrible ordeals. We're healthier and more effective by accepting life's vicissitudes and refusing victimhood. In the words of a friend trying to distil the essence of Buddhism into a pithy phrase: "Shit happens; don't take it too personally". Succinct if not pretty.
